Sweet Potato and Carrot Soup #ChakraDiet

Ingredients: (Use organic if possible)
- 4 sweet potatoes, peeled and chopped
- 4 carrots, peeled and chopped
- 1 onion, chopped
- 1 inch garlic, roughly chopped
- 1 garlic, minced
- 3 cups vegetable broth
- 1 tsp turmeric
- salt and pepper
- cinnamon (optional)
- raw pepitas (optional)
- coconut milk (optional)
- salt and pepper
Directions:
- Put olive oil in a pot on medium high heat. Add in onions and sauté for five minutes. Add ginger, and garlic and stir for another minute.
- Stir in carrots, sweet potatoes, turmeric, salt and pepper. Mix well.
- Add in broth and bring to a boil Lower the temperature to a simmer and cover the pot for 15-20 minutes.
- The vegetables should be soft. Place batches into the blender or using an immersion blender, blend until smooth. If you need be, you can add more water to the mixture.
- Return to the pot to warm through or serve as is.
- Finish off with pipitas, dash of cinnamon and 1 tsp of coconut milk.
